After completing his Bachelor of Fine Arts in Creative Writing, Brian Toomey acquired his culinary diploma from ICASI in 2005. Brian spent three months in Tuscany completing his externship at Ristorante Al Galopappa, a one star Michelin Restaurant. Upon returning to Ohio, Brian worked for Chef Michael Symon at Lola, and as the Sous Chef at Lolita. Brian has gained experience working at many well known Cleveland restaurants including Verve, The Black Pig, and most recently as the Executive Chef of Cork and Cleaver Social Kitchen in Broadview Heights. Brian holds firm to his Italian culinary roots using European techniques and focusing on simple ingredients prepared properly. Brian's role at ICASI includes managing the food production kitchen and instructing both professional and recreational classes. Brian strives to use his experience and culinary skills to prepare future generations of students for careers in the restaurant business, and to bring knowledge and understanding of basic culinary techniques to the home chef.
